Rob and Kyle are a father and son team who have worked together before in their food truck in Albuquerque, New Mexico. Rob was born in Albuquerque, and Kyle in San Francisco, where Rob worked for 10 of his over 25 years of high-end and ultra high-end hotel and restaurant experience. Although not a chef, working at the top level of restaurant requires an intimate knowledge of ingredients, cooking processes, standards for food preparation, and presentation.
Robert Almaraz
I was born in Albuquerque, New Mexico. I have worked in the high end and ultra-high-end hotel and restaurant business for twenty-five years: The Palace Court, Caesars Palace ('89-'91); Aqua, San Francisco ('94-'98); The Ritz-Carlton, Washington, DC (Sommelier); and the Oval Room (General Manager - see 2007 Forbes magazine, "Top Power Restaurants in the World"). I am not a trained chef, but I have worked with and cooked for many who are, at the highest levels.. Hometown: Albuquerque.
Kyle Tolonen-Almaraz
I was born in San Francisco but raised in the Midwest, and Denver has long been a familiar haven and a special place to me. In my years travelling across the country, I've tasted famous Americana foods from all over, from the deli meats of Barney Greengrass in New York City to the deep-dish pizza of Giordano's in Chicago. Mackinaw island fudge, world famous southern barbeques, chickens feet and Florida alligator are a few things I've had on my plate.

Together the duo is set to bring the hard-working residents of Denver high-quality food that is familiar to everyone, generous in portion, meant for leftovers, and always delicious. Whether eaten ready to serve, saved in the refrigerator for later consumption, or frozen to extend the food budget, the food Rob has been cooking for 35 years for himself and his family will help to make your life a little tastier, and very helpful to your bottom line.
The menu will change periodically to take advantage of seasonal produce, particular comfort food, or to celebrate the variety of holidays we all enjoy. And while we do not cater to specialty diets or food trends, we are certainly willing to accommodate most requests, given enough time to create them. We aim to please, so give us an advance order for an upcoming social event in your home, or just a Tuesday taco night, and you can avoid waiting in line.
